Vegetable Burrito | RECIPES

Hi Guys!

I had a girls night a few days ago and I decided to make the family a little someting before I went out. Ken got to choose the dinner since he was going to be home with 3 kids all evening. This recipe is REALLY easy and fast. The ingredients are probably already in your kitchen. Skip the cheese topping and these are completely vegan.

For this recipe you need:

Stirfry:

  • 4 tbsp Olive oil
  • 1 Large onion
  • 3 Sweet peppers
  • 2 Zucchini
  • 2 Portobello mushrooms
  • 1 bunch spinach
  • 1 tbsp minced Garlic
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Chilli powder
  • Salt & Pepper to your taste

Beans:

In the left over sauce from the stir fry add:

  • 2 Tomatoes diced
  • 2 cans Black beans

Saute the onion with garlic, cumin, paprika, and chilli powder. Once they are translucent start adding the sweet peppers, zucchini, and last the mushrooms and spinach. Once it’s cooked remove from the pot and in the remaining sauce sauté the tomatoes and add the black beans until cooked.

To assemble your burrito warm up one large tortilla bread and add your stir fry, beans and toppings of choice. I’m using salsa, jalapeño, avocado, cilantro, lemon, and…. Berties (if you know, you know)
